I hear good things about Demon carburetors but I don't run them myself so I cannot give personal experience advice.

Demon Carbs are great for power and are reliable. I also like Holley mainly because you know they perform, considering they have like 1000 yrs in engineering. But opening up your hood and saying you have a Demon is pretty cool.

Pro systems makes about the best carb around. Mine was great, built for your combo, including fuel curve documentation and all!

I use Quick Fuel, last one I did scared the sheot out of me when the car started and idled while i was only trying to get fuel to the carb, on a new motor. For $535 A Quick Fuel is a great carb. Patrick's carbs are great, but much more money I believe. I wouldn't run a demon on a performance motor, great for a 355 with a cam, intake and headers, but not for real power.

Another vote for Pro-systems. Pat builds some pretty badass stuff.
