Default Aftermarket dash questions

I'm thinking of installing a Covans dash in my 69 Firebird. I see it's available with or without guages installed. I noticed that the complete dash included "harnesses" for the guages. I was wondering if I could buy the dash then fill it with guages myself and since I'm rewiring my car using an American Autowire kit, would the Covans harnesses be required. After all, I thought you just plug and play guages anyway. FYI, I can get the guages way cheaper than Covans sells them.

The American Auto Wire Kit has the gauge wiring included with a plug so you can remove the gauge cluster.. I used a blank Covan dash w/ AutoMeter Gauges in my 67 Camaro.
