Curious to know what everyone uses for general fasteners like body panels, parts, brackets etc. I'd like everything to match so a kit would be great.
Also what finishes? Cadmium, black oxide, stainless, etc.

What are you building? These guys have kits covering a good range of applications: Totally Stainless (http://www.totallystainless.com/)
I know a good amount of hardware on my dad's Cal-Looker is from them. I've only purchased odds and ends but can say that they've always been prompt on answering my questions.

I purchased most of my general fasteners from McMaster-Carr. Not terribly exotic but good selection of fastener styles. All specialty bolts are ARP.
