I noticed that DSE springs go as low as 2inch drop in the front and 3inches in the rear. If I have a 17 inch wheel in the front and an 18inch wheel in the rear, would the back of my 67 Camaro be lower than the front? Or would it balance out because the rear end is naturally a little higher than the front end?

It all depends on the profile of your tires. You can get 17" tires and 18" tires to be the same height as long as get the right profile tire. For instance a 245/45R17 tire is the same height as a 315/30R18 (25.7") but if you drop the 45 aspect ratio down to a 40 series it becomes an inch shorter (24.7").
