My Brother in Law (Rudy) is about 6'3 or so.... he can't get comfortable working under my full lift lift! It's so awkward for him.
The only solution is to raise the roof --- OR --- dig a pit.
Do a test -- get yourself a sheet of plywood -- nail up some support for it at the height you'd have to work at -- then get under it and see what I'm talking about.

Agreed, I am kind of a freak of nature, and at 60 I am tired of stooping over to work on cars.

Thanks, this is probably the direction I will take. I may have a couple of scissor trusses made and pull that part of the sheet metal roof and install them.
