The cleanest and easiest solution is the McLeod adapter plate and extended pilot bushing that allow you to use any standard Chevy or aftermarket bellhousing, a mechancial clutch linkage and the flywheel of your choice. The entire adapter setup is about $200 from McLeod. (I don't care for the hydraulics on an LS1 transmission because if anything goes wrong with the slave cylinder you need to pull the transmission to fix it.)

McLeod also lists a modular bellhousing which could be used to adapt your engine/flywheel to the LS1 T56.

Finally, I'd recommend a Heim joint mechanical clutch linkage. Very smooth and, obviously, easy to adjust.
